🔥 Instructions
1. Brown the beef (important flavor step)
- Heat olive oil in a pan over medium-high heat
- Season beef with salt, pepper, paprika, garlic powder
- Sear beef in batches until browned on all sides
👉 This step builds deep flavor (don’t skip if possible)
2. Load the slow cooker
Add in this order:
- beef
- onions, carrots, celery
- mushrooms
- garlic
- potatoes (if using)
3. Add liquids & seasoning
Pour in:
- beef broth
- Worcestershire sauce
- tomato paste
- thyme, rosemary, bay leaf
Stir gently to combine.
4. Slow cook
- LOW: 7–8 hours
- HIGH: 4–5 hours
👉 Beef should be fork-tender and easily shredded.
5. Thicken the stew (optional but recommended)
If you want a richer texture:
- Mix cornstarch + water
- Stir into stew during last 20–30 minutes
- Or mash a few potatoes directly in the pot
6. Finish & serve
- Remove bay leaf
- Stir in butter for extra richness (optional)
- Garnish with fresh parsley
Serve hot with:
- crusty bread
- mashed potatoes
- rice or egg noodles

- Chuck roast is best (fat = flavor + tenderness)
- Mushrooms add natural umami depth
