Strawberry Earthquake Cake is a rich, gooey dessert made with strawberry cake mix, a sweet cream cheese swirl, fresh strawberries, and often white chocolate chips. It’s called an “earthquake cake” because the cream cheese mixture creates cracks and swirls as it bakes.
Ingredients
- 1 box strawberry cake mix (plus eggs, oil, and water called for on the box)
- 8 oz (225 g) cream cheese, softened
- ½ cup (1 stick) butter, melted
- 2½ cups powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- 1 cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Prepare the strawberry cake batter according to package directions.
- Pour the batter into the prepared pan.
- In a separate bowl, beat together the cream cheese, melted butter, powdered sugar, and vanilla until smooth.
- Sprinkle the diced strawberries and white chocolate chips over the cake batter.
- Drop spoonfuls of the cream cheese mixture across the top.
- Use a knife to lightly swirl the mixture into the batter.
- Bake for 40–45 minutes, or until the center is set and the top is lightly golden.
- Cool before slicing and serving.
