Cinnamon Sugar Donut Muffins
These muffins have the flavor of a classic cake donut with a buttery cinnamon-sugar coating.
Ingredients
For the muffins
- 1½ cups (190 g) all-purpose flour
- 1½ tsp baking powder
- ½ tsp salt
- ½ tsp ground nutmeg
- ½ cup (100 g) granulated sugar
- ⅓ cup (80 ml) milk
- 1 large egg
- ⅓ cup (75 g) unsalted butter, melted
- 1 tsp vanilla extract
For the coating
- ¼ cup (55 g) unsalted butter, melted
- ½ cup (100 g) granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
- In a bowl, whisk together the flour, baking powder, salt, and nutmeg.
- In another bowl, whisk the sugar, milk, egg, melted butter, and vanilla.
- Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about ⅔ full.
- Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for about 5 minutes.
- Mix the cinnamon and sugar in a shallow bowl.
- Brush each warm muffin with melted butter, then roll or sprinkle with the cinnamon-sugar mixture until well coated.
Tips
- For an even more donut-like flavor, increase the nutmeg to ¾ tsp.
- Serve warm for the best texture.
- Store in an airtight container for up to 3 days.
Optional Glaze
For a bakery-style finish, drizzle with a simple glaze made from:
- 1 cup powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla extract
Mix until smooth and drizzle over cooled muffins.
