A tian is a classic French baked dish where vegetables are sliced thin, layered beautifully, and slow-roasted until tender, slightly caramelized, and almost melt-in-your-mouth. A root vegetable version is earthy, sweet, and very comforting.
🧂 Ingredients
- 2 medium potatoes
- 2 carrots
- 1 parsnip (optional but adds sweetness)
- 1 beet (optional for color contrast)
- 1 sweet potato (optional variation)
- 2–3 tbsp olive oil
- 2–3 cloves garlic (minced)
- 1 tsp dried thyme or rosemary
- Salt & black pepper
- 1 tbsp butter (optional for richness)
🌿 Optional topping
- Grated cheese (Parmesan or Gruyère)
- Fresh herbs (parsley or thyme)
🔥 Instructions
1. Preheat oven
Set to 180°C (350°F). Lightly grease a baking dish or round tart pan.
2. Prepare vegetables
- Peel all root vegetables
- Slice them very thin (2–3 mm)
(use a knife, mandoline, or food slicer for best results)
3. Make seasoning base
In a bowl mix:
- olive oil
- garlic
- thyme/rosemary
- salt & pepper
4. Coat vegetables
Toss sliced vegetables in the oil mixture so every slice is lightly coated.
5. Layer the tian
Arrange slices standing upright in tight rows (like overlapping cards):
- alternate colors for a beautiful spiral or striped pattern
- pack them tightly so they hold shape while baking
6. Add finishing touches
- Drizzle remaining oil mixture over the top
- Optional: small dots of butter
- Optional: sprinkle cheese (cheese) on top
7. Bake
- Cover with foil and bake for 35–40 minutes
- Remove foil and bake another 20–30 minutes until:
- edges are golden
- vegetables are soft and slightly crisp on top
8. Rest before serving
Let sit 5–10 minutes so it sets and layers hold together.
🍽️ What you get
- Soft, caramelized root vegetables
- Slight crispy edges
- Sweet + savory flavor balance
- Beautiful layered presentation
💡 Pro tips
- Uniform slicing = even cooking
- Don’t overcrowd liquid; veggies release moisture naturally
- Add a splash of cream or stock for a softer “gratin-style” base
- A little cheese makes it richer and more comforting
