A hearty Beef Stew with Mashed Potatoes serves 4–6.
Ingredients
Beef stew
- 2 lb (900 g) beef chuck, cubed
- 2 tbsp flour
- Salt and pepper
- 2 tbsp oil
- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 tsp dried thyme
- 2 bay leaves
Mashed potatoes
- 2 lb (900 g) potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup milk or cream
- Salt and pepper
Instructions
- Season beef with salt, pepper, and flour.
- Brown beef in oil in a large pot; remove and set aside.
- Sauté onion, carrots, celery, and garlic for 5 minutes.
- Stir in tomato paste, then add broth, thyme, bay leaves, and beef.
- Bring to a simmer, cover, and cook 1½–2 hours until the beef is tender.
- Meanwhile, boil potatoes until soft (15–20 minutes). Drain and mash with butter, milk, salt, and pepper.
- Remove bay leaves from the stew. Adjust seasoning.
- Serve the beef stew over a bed of mashed potatoes.
