Instructions
- Prepare the oven:
Preheat oven to 175°C (350°F). Grease and flour a loaf pan or bundt pan. - Mix dry ingredients:
In a bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. - Make the batter:
Beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
Add the dry ingredients slowly, alternating with sour cream. Fold in grated carrots and nuts. - Bake:
Pour batter into the prepared pan. Bake for 55–70 minutes until a toothpick inserted in the centre comes out clean. - Prepare glaze:
Beat cream cheese, powdered sugar, milk, and vanilla until smooth and creamy. - Finish:
Cool the cake completely, then drizzle the cream cheese glaze over the top.
