Blueberry Protein Cake Bowl
A soft, fluffy single-serving protein cake made in the microwave in just a few minutes.
Ingredients
- 1/2 cup vanilla protein powder (about 50–60 g)
- 2 tablespoons oat flour (or finely ground oats)
- 1/2 teaspoon baking powder
- 1 large egg
- 3 tablespoons milk of choice
- 1/4 teaspoon vanilla extract
- 1/2 cup fresh or frozen blueberries
- 1–2 teaspoons maple syrup or sweetener of choice (optional)
Optional Toppings
- Greek yogurt
- Extra blueberries
- Almond butter
- Sugar-free syrup
- Lemon zest
Instructions
1. Mix the Batter
In a microwave-safe bowl, whisk together:
- Protein powder
- Oat flour
- Baking powder
Add:
- Egg
- Milk
- Vanilla
- Sweetener (if using)
Stir until smooth.
Fold in the blueberries.
2. Microwave
Microwave on high for 60–90 seconds.
The cake is done when the center is mostly set but still moist. Cooking time may vary depending on your microwave.
3. Cool Slightly
Let the cake bowl sit for 1–2 minutes.
4. Add Toppings
Top with a spoonful of Greek yogurt, extra blueberries, and a drizzle of almond butter or syrup if desired.
