🍲 Crockpot Chicken Tortellini Soup
Ingredients
- 2 boneless, skinless chicken breasts
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 carrots (sliced)
- 2 celery stalks (chopped)
- 4 cups chicken broth
- 1 tsp Italian seasoning
- Salt & black pepper (to taste)
- 1 package (about 250–300g) cheese tortellini
- 1 cup fresh spinach (or kale)
- 1 cup heavy cream (or half-and-half)
- 2 tbsp butter (optional, for richness)
Instructions
1. Add to Crockpot
Place chicken, onion, garlic, carrots, celery, broth, Italian seasoning, salt, and pepper into the slow cooker.
2. Cook
- Low: 6–7 hours
- High: 3–4 hours
3. Shred the Chicken
Remove chicken, shred with two forks, then return it to the crockpot.
4. Add Tortellini
Stir in tortellini and cook:
- 20–30 minutes (until tender)
5. Finish the Soup
Add spinach, cream, and butter. Let it heat through for 5–10 minutes.
Optional Add-Ons
- Grated parmesan cheese on top
- Red chili flakes for a bit of heat
- Mushrooms for extra depth
Tips
- Don’t add tortellini too early—it gets mushy
- Use rotisserie chicken to save time (add it later with tortellini)
- For a lighter version, skip the cream and use milk
