Delicate lobster tails gently poached in rich, aromatic butter for a luxurious, tender, and flavorful seafood dish that’s perfect for elegant dinners or special occasions.
Butter Poached Lobster Tails Recipe
Ingredients
- 4 lobster tails
- 1 cup unsalted butter (cut into chunks)
- 2 cloves garlic, lightly crushed
- 1 small shallot, finely chopped
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
- Salt to taste
- Optional: pinch of paprika or cayenne for subtle heat
Instructions
Step 1: Prepare the Lobster Tails
Using kitchen shears, cut along the top of each shell lengthwise. Gently pull the meat out, keeping it attached at the base, and rest it on top of the shell for even cooking.
Step 2: Clarify and Warm the Butter
In a saucepan over very low heat, melt the butter slowly. Keep the temperature between 160–180°F (70–80°C); the butter should not boil. Skim off any foam if desired for a clearer finish.
Step 3: Add Aromatics
Add the crushed garlic and chopped shallot to the warm butter. Let them infuse gently for 3–5 minutes without browning.
Step 4: Poach the Lobster
Submerge the lobster tails in the butter. Cook gently for 5–8 minutes, depending on size, until the meat turns opaque and tender. Avoid high heat to prevent the lobster from becoming tough.
Step 5: Finish the Flavor
Remove the lobster tails from the butter. Stir lemon juice, parsley, and a pinch of salt into the butter sauce.
Step 6: Serve
Spoon the warm butter sauce over the lobster tails and serve immediately.
Tips
- Maintain low heat throughout; butter poaching is about gentle cooking, not frying.
- Use a thermometer if possible to keep the butter in the correct temperature range.
- Pair with steamed vegetables, rice, or crusty bread to soak up the sauce.
This method produces incredibly tender lobster with a silky texture and rich, buttery flavor, making it a standout dish for refined dining at home.
