Step 1: Soak the Fruits
Combine all dried fruits in a bowl. Pour over the juice (and optional brandy if using). Let them soak for at least 1 hour, or overnight for deeper flavor.
Step 2: Preheat the Oven

Mixing Instructions
Step 4: Cream Butter and Sugar
In a large bowl, beat the butter and brown sugar until light and fluffy.
Step 5: Add Eggs
Add eggs one at a time, beating well after each addition. Mix in vanilla extract and citrus zest.
Step 6: Combine Ingredients
Gradually fold the dry ingredients into the batter.
Add the soaked fruits (along with any remaining liquid) and chopped nuts. Mix gently until evenly combined.
Baking Instructions
Step 7: Transfer to Pan
Pour the batter into the prepared cake pan and smooth the top.
Step 8: Bake
Bake for 60–90 minutes, or until a skewer inserted into the center comes out clean. If the top browns too quickly, cover loosely with foil.
Step 9: Cool
Allow the cake to cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely.
Optional Aging Step
For a richer flavor, wrap the cooled cake in parchment and foil. Store in an airtight container and brush lightly with juice or a small amount of syrup every few days for 1–2 weeks.
Serving Suggestions
Slice and serve with tea or coffee. It also pairs well with a light glaze or a dusting of powdered sugar.
