Delicious Fried Rice with Eggs: A Simple and Quick Meal
This easy egg fried rice comes together in about 15 minutes and is a great way to use leftover cooked rice.
Ingredients (Serves 2)
- 3 cups cooked cold rice (day-old rice works best)
- 2 large eggs
- 2 tablespoons cooking oil
- 2 cloves garlic, minced
- 2 green onions, sliced
- ½ cup frozen peas and carrots (optional)
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil (optional)
- ¼ teaspoon black pepper
- Salt, to taste (if needed)
Instructions
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
- Beat the eggs and pour them into the pan. Scramble until just cooked, then remove and set aside.
- Add the remaining oil to the pan. Sauté the garlic for about 30 seconds until fragrant.
- Add the peas and carrots (if using) and cook for 2–3 minutes.
- Add the cold rice, breaking up any clumps, and stir-fry for 3–4 minutes.
- Stir in the soy sauce, sesame oil, and black pepper.
- Return the scrambled eggs to the pan and toss everything together.
- Add the green onions, stir for another minute, and serve hot.
Tips
- Use cold, day-old rice to prevent the fried rice from becoming mushy.
- Add cooked chicken, shrimp, tofu, or extra vegetables for a heartier meal.
- Adjust the soy sauce to your taste, and add chili flakes or sriracha if you like some heat.
