🥬 Easy Cabbage Soup
A simple, healthy, budget-friendly soup that’s light, comforting, and great for meal prep.
Ingredients (6–8 servings)
- 1 medium head cabbage, chopped (about 6–8 cups)
- 1 large onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 can (14.5 oz / 410 g) diced tomatoes
- 6 cups (1.5 L) vegetable broth or chicken broth
- 1–2 tbsp olive oil
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp dried oregano
- 1 tsp paprika
- 1 bay leaf
- Optional: red pepper flakes for heat
Instructions
1. Sauté vegetables
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery.
- Cook 5–7 minutes until softened.
- Add garlic and cook 1 more minute.
2. Build the soup
- Add chopped cabbage to the pot.
- Stir in diced tomatoes, broth, bay leaf, and seasonings.
3. Simmer
- Bring to a boil, then reduce heat.
- Cover and simmer for 25–35 minutes, until cabbage is tender.
4. Adjust and serve
- Remove bay leaf.
- Taste and adjust salt and pepper.
- Serve hot.
