🥩 Lamb chops
- 6–8 lamb chops (rib or loin)

- 1 lb baby potatoes (halved)

🔥 Instructions
1. Prep the potatoes
- Boil baby potatoes for 8–10 minutes until just tender
- Drain and let dry slightly
- Toss with:

- salt, pepper, rosemary
2. Roast the potatoes
- Heat oven to 425°F (220°C)
- Roast for 20–25 minutes until golden and crispy

3. Season the lamb chops
- Pat lamb dry (important for searing)
- Rub with:
- olive oil
- garlic
- salt, pepper
- rosemary, thyme, paprika
- lemon juice

4. Sear the lamb chops
- Heat a skillet (cast iron preferred) on medium-high

- Sear lamb chops:
