Garlic Herb Lamb Chops
Ingredients (serves 4)
- 8 lamb loin or rib chops (about 1½–2 lb / 700–900 g)
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp lemon juice
- Optional: 1 tbsp butter for finishing
Instructions
1. Marinate the lamb
In a bowl, combine:
- Garlic
- Rosemary
- Thyme
- Olive oil
- Lemon juice
- Salt and pepper
Rub the mixture all over the lamb chops. Let them marinate for at least 30 minutes at room temperature, or up to 8 hours in the refrigerator.
2. Cook the chops
Heat a large skillet or grill pan over medium-high heat.
Cook the lamb chops:
- 3–4 minutes per side for medium-rare
- 4–5 minutes per side for medium
During the last minute, add the butter (if using) and spoon it over the chops.
3. Rest
Transfer the chops to a plate and let them rest for 5 minutes before serving.

- Mint yogurt sauce
- A simple green salad
Garlic Herb Butter Sauce (Optional)
Mix together:
- 2 tbsp softened butter
- 1 clove garlic, minced
- 1 tsp chopped rosemary
- 1 tsp chopped parsley
Place a small dollop on each hot chop just before serving.
Internal temperatures:
- Medium-rare: 135°F (57°C)
- Medium: 145°F (63°C)
The combination of garlic, rosemary, and thyme complements lamb beautifully and creates a flavorful crust when seared or grilled.
