Ingredients
For the Beef Roast
- 3–4 lb (1.4–1.8 kg) beef chuck roast
- 2 tsp salt
- 1 tsp black pepper
- 1 tbsp olive oil
For the Caramelized Onion Gravy
- 4 large yellow onions, thinly sliced
- 3 tbsp butter
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 cup beef stock or consommé
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
- 1 bay leaf
For the Gruyère Topping
- 1½ cups shredded Gruyère cheese
- 1 French baguette, sliced and toasted (optional)
Instructions
1. Season and Sear the Roast
- Pat the roast dry.
- Season generously with salt and pepper.
- Heat olive oil in a Dutch oven or heavy pot over medium-high heat.
- Sear the roast for 3–4 minutes per side until deeply browned.
- Remove and set aside.
2. Caramelize the Onions
- Reduce heat to medium.
- Add butter and sliced onions.
- Cook slowly for 30–40 minutes, stirring occasionally, until the onions become deep golden brown.
- Add garlic and cook for 1 minute.
3. Build the Gravy
- Sprinkle flour over the onions and stir for 1–2 minutes.
- Gradually whisk in beef broth and stock.
- Add Worcestershire sauce, thyme, and bay leaf.
- Bring to a gentle simmer.
4. Roast the Beef
- Return the beef to the pot.
- Cover and cook:
- Oven: 325°F (165°C) for 3–4 hours, or
- Slow cooker: Low for 7–8 hours.
- Cook until fork-tender.
5. Finish with Gruyère
- Remove the roast and shred or slice as desired.
- Place in an oven-safe dish.
- Spoon some onion gravy over the top.
- Cover generously with Gruyère cheese.
- Broil for 2–4 minutes until melted and bubbly.
