Homemade Baguettes
These classic French-style baguettes have a crisp golden crust and a soft, airy interior.
Ingredients (Makes 2 Baguettes)
- 3½ cups (440 g) bread flour
- 1½ tsp salt
- 1 tsp sugar
- 1 tsp instant yeast
- 1¼ cups (300 ml) warm water
Instructions
1. Make the Dough
- In a large bowl, combine flour, salt, sugar, and yeast.
- Add the warm water and mix until a shaggy dough forms.
- Knead for 8–10 minutes by hand (or 5–6 minutes with a mixer) until smooth and elastic.
2. First Rise
- Place the dough in a lightly oiled bowl.
- Cover and let rise in a warm place for 1–1½ hours, or until doubled in size.
3. Shape the Baguettes
- Gently deflate the dough.
- Divide it into two equal pieces.
- Shape each piece into a rectangle, fold the long sides toward the center, then roll into a log about 12–14 inches (30–35 cm) long.
- Place on a parchment-lined baking sheet or baguette pan.
4. Second Rise
- Cover loosely with a towel.
- Let rise for 30–45 minutes until puffy.
5. Score the Dough
Using a sharp knife or bread lame, make 3–5 diagonal slashes across the top of each loaf.
6. Bake
- Preheat the oven to 450°F (230°C).
- Place a shallow pan of hot water on the bottom rack to create steam.
- Bake the baguettes for 20–25 minutes, until deep golden brown and crisp.
7. Cool
Transfer to a wire rack and let cool for at least 20 minutes before slicing.

- Use bread flour for a chewier texture.
- Steam in the oven helps create a crisp crust.
- For more flavor, let the dough rise slowly overnight in the refrigerator.
- Avoid adding too much flour while kneading; slightly sticky dough produces a lighter crumb.
