Lazy Man Peach Cobbler
This is a super easy “dump and bake” style cobbler with minimal prep and maximum flavor.
Ingredients
- 1 can (15–29 oz) sliced peaches in syrup (do not drain)
- 1 cup self-rising flour (or see substitute below)
- 1 cup granulated sugar
- 1 cup milk
- 1/2 cup (1 stick) melted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
Optional Add-Ins
- 1/4 teaspoon nutmeg
- 1/2 cup brown sugar (for richer topping)
- 1/2 cup blueberries or raspberries mixed with peaches
Instructions
Step 1: Preheat Oven
Preheat oven to 350°F (175°C).
Pour melted butter into a 9×9-inch baking dish or 9-inch round dish.
Do not stir the butter.
Step 2: Make the Batter
In a bowl, whisk together:
- Flour
- Sugar
- Milk
- Vanilla
- Salt
- Cinnamon (if using)
Mix until smooth, but do not overmix.
Step 3: Assemble (Do NOT Stir Layers)
Pour the batter directly over the melted butter in the baking dish.
Do not stir.
Spoon the peaches (and all syrup) evenly over the top.
Again, do not mix layers.
The batter will rise through the fruit while baking.
Step 4: Bake
Bake for 45–55 minutes, or until:
- The top is golden brown
- The edges are bubbly
- The center is set
Step 5: Cool and Serve
Let cool for at least 10–15 minutes before serving.
Serve warm.
Optional Serving Ideas
- Vanilla ice cream
- Whipped cream
- Caramel drizzle
Self-Rising Flour Substitute
If you don’t have self-rising flour:
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
Notes
This recipe works because the batter rises around the fruit and butter, creating a soft cake-like top with a syrupy peach layer underneath.
If you want, I can also give you a crockpot version or a version using fresh peaches.
