Marinated Greek Lamb Chops with Mushrooms and Tomatoes
This Mediterranean-style dish combines tender lamb chops with a classic Greek-inspired marinade, sautéed mushrooms, and juicy tomatoes.
Ingredients (Serves 4)
For the Lamb Marinade
- 8 lamb loin or rib chops (about 1½–2 lb / 700–900 g)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1 tsp lemon zest
- 1 tsp dried oregano
- ½ tsp dried thyme
- ½ tsp rosemary, chopped
- 1 tsp salt
- ½ tsp black pepper
For the Mushrooms and Tomatoes
- 2 tbsp olive oil
- 8 oz (225 g) mushrooms, sliced
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- ½ tsp oregano
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley
- Optional: 2 oz (60 g) crumbled feta cheese
Instructions
1. Marinate the Lamb
- In a bowl, combine olive oil, garlic, lemon juice, lemon zest, oregano, thyme, rosemary, salt, and pepper.
- Coat the lamb chops thoroughly with the marinade.
- Cover and refrigerate for at least 1 hour, preferably 4–8 hours.
2. Cook the Lamb Chops
- Remove lamb from the refrigerator 20–30 minutes before cooking.
- Heat a grill, grill pan, or heavy skillet over medium-high heat.
- Cook chops:
- 3–4 minutes per side for medium-rare
- 4–5 minutes per side for medium
- Transfer to a plate and let rest for 5 minutes.
3. Prepare the Mushrooms and Tomatoes
- Heat 2 tbsp olive oil in a skillet.
- Add mushrooms and cook until browned, about 5–7 minutes.
- Add garlic and oregano; cook for 30 seconds.
- Stir in tomatoes and cook for 2–3 minutes until slightly softened.
- Season with salt and pepper.
4. Serve
- Spoon the mushroom and tomato mixture onto a serving platter.
- Arrange lamb chops on top.
- Sprinkle with parsley and, if desired, feta cheese.
- Serve with roasted potatoes, rice, couscous, or a Greek salad.
Tips
- For extra Greek flavor, add 1 tablespoon of red wine vinegar to the marinade.
- A meat thermometer should read about 135°F (57°C) for medium-rare or 145°F (63°C) for medium after resting.
- Fresh oregano and rosemary provide the best flavor if available.
