Slow Cooker Pineapple Sausage
A sweet-and-savory slow cooker recipe that’s perfect for parties, potlucks, or an easy family dinner.
Ingredients
- 2 lbs (900 g) smoked sausage or kielbasa, sliced into 1-inch pieces
- 1 can (20 oz / 565 g) pineapple chunks, drained (reserve ½ cup juice)
- ½ cup brown sugar
- ¼ cup soy sauce
- 2 tbsp ketchup
- 1 tbsp Dijon mustard (optional)
- 1 clove garlic, minced
- 1 tsp grated fresh ginger (optional)
- 1 tbsp cornstarch
- 2 tbsp water
Instructions
1. Prepare the Slow Cooker
Add the sliced sausage and pineapple chunks to the slow cooker.
2. Make the Sauce
In a bowl, whisk together:
- Reserved pineapple juice
- Brown sugar
- Soy sauce
- Ketchup
- Mustard
- Garlic
- Ginger
Pour the mixture over the sausage and pineapple.
3. Cook
- Low: 4–5 hours
- High: 2–3 hours
Stir once or twice if possible.
4. Thicken the Sauce
About 20 minutes before serving, mix the cornstarch and water to create a slurry.
Stir it into the slow cooker, cover, and cook until the sauce thickens.

Or serve as a party appetizer with toothpicks.
Tips
- For extra heat, add red pepper flakes or diced jalapeños.
- Use turkey sausage for a lighter version.
