Chicken Zucchini Poppers Recipe
Meta Description
Learn how to make crispy and healthy chicken zucchini poppers with minced chicken, grated zucchini, and simple seasonings. A high-protein, family-friendly snack or appetizer recipe.
Introduction
Chicken zucchini poppers are a light, protein-packed snack made by combining minced chicken with grated zucchini, herbs, and seasoning, then pan-frying, baking, or air-frying until golden. The zucchini keeps the chicken juicy while adding moisture and a subtle vegetable flavor, making these poppers a healthier alternative to traditional fried snacks.
Ingredients (Makes 12–16 poppers)
- 250 g minced chicken
- 1 medium zucchini, grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 3–4 tablespoons breadcrumbs (or oats for a healthier option)
- 1 tablespoon fresh parsley or coriander, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika or chili powder (optional)
- ½ teaspoon dried oregano (optional)
- 1–2 tablespoons oil (for cooking or brushing if baking/air frying)
Step-by-Step Instructions
Step 1: Prepare the zucchini
Grate the zucchini using a fine or medium grater. Place it in a clean cloth or paper towel and squeeze out excess water. This step is important to prevent soggy poppers.
Step 2: Mix the ingredients
In a large bowl, combine minced chicken, drained zucchini, onion, garlic, egg, breadcrumbs, herbs, and all seasonings. Mix thoroughly until the mixture becomes sticky and well combined.
Step 3: Shape the poppers
Take small portions of the mixture and shape them into bite-sized balls or slightly flattened patties. Keep them uniform in size for even cooking.
Step 4: Choose your cooking method
Pan-frying method
Heat a small amount of oil in a non-stick pan over medium heat. Cook the poppers for 3–4 minutes per side until golden brown and fully cooked inside.
Air fryer method
Preheat air fryer to 180°C (350°F). Lightly spray poppers with oil and cook for 10–12 minutes, flipping halfway through.
Baking method
Preheat oven to 190°C (375°F). Place poppers on a lined tray, brush lightly with oil, and bake for 18–20 minutes, turning once halfway.
Step 5: Serve
Serve hot with dipping sauces such as garlic mayo, yogurt dip, sweet chili sauce, or spicy ketchup.
Tips for Best Results
- Always remove excess moisture from zucchini to avoid soggy texture
- Do not overmix, as it can make the poppers dense
- Use finely minced chicken for smoother texture
- Lightly oiling helps achieve a crisp golden crust
Variations
- Add grated cheese for a richer, gooier center
- Use ground turkey instead of chicken for a leaner version
- Add chili flakes for a spicy kick
- Mix in grated carrot or corn for added sweetness and texture
